Having a serious hankering for some serious Mexican food on a snowy Friday evening, I made my way in the headwind and all, down to Emilio’s Superchef located on Colfax and Logan.
My second time at the establishment, I felt as though I needed to try something different. I am a big carne asada fan and had previously tried the carne asada with flour tortillas with beans and rice. It definitely hit the spot and some.
But as usual, I had a huge helping of chips and salsa that are always complimentary and are a great way to get things started. This time I went with the carne asada chimichunga smothered in green chili with a side of beans and rice.
I was surprised to find that the carne asada chimichunga was not a regular on the menu but my server asked if I wanted it made special and had it made right there on the spot. Definitely a plus when the restaurant caters to your taste.
One of the best parts was that my dish was so large that I had leftovers for later in the night.
The décor was nice and the service was even better. In fact, my server recognized me from before and knew that it was only my second time there. I was quite impressed.
A definite spot to checkout, Emilio’s is for sure a Colfax gem.

I'VE BEEN TO EMILIO'S ON SATURDAYS FOR BREAKFAST WITH MY BUDDIES WE LOVE THE CHORIZO,EG,POTATO SMO WITH CHZ. THE SERVER IS COOL GREAT SERVICE. I'M FROM VIRGINIA BEST MEXICAN FOOD IN DENVER. PLS HURRY WITH THE LIQUOR LICENSE. WE WANT CORONAS
